
Well, lucky me... Our produce market had a fantastic sale on organic gala apples. Color me happy. I bought a few, well a case or two. Then I went to town making Dried Apple Chips and Baked Cinnamon Applesauce. Exhausted from apple processing, I decided to just make my simple apple sauce with the last batch of apples. As a matter of fact this method is so simple that I didn't think to share it.
Once my Munchkin dove into it and started doing a dance in her chair, I knew I had to share it and go buy more apples. Organic and naturally sweet with 2 ingredients? Yes, more apples!

Cinnamon, spice and everything nice; that's what Crock Pot Spiced Apple Butter is made of.

Simple Naturally Sweet Apple Sauce
makes 7 pints
10 pounds organic gala apples, washed, peeled, cored and cut into ½” pieces
1 lemon, juiced
2 cups water
In a 12 quart (or larger) stock pot, over high heat, add water, apples and lemon juice. Stir to combine and cover. Once boiling rapidly, reduce to medium high and cook until apples are soft, stirring often so apples do not stick to the bottom. Approximately 20 minutes.
Working in batches, transfer apples to blender or food processor and blend until smooth. Return to pot and bring back to a boil. Remove from heat and process for canning or refrigerate.
Process canning jars according to manufacturers directions or keep in refrigerator.
